Asian Inspired Mackerel

Succulent mackerel fillets marinated in a flavourful Asian blend of soy, ginger, and lime, then grilled to perfection. This dish offers a delightful combination of smoky, tangy, and umami flavours. Serve it alongside steamed rice or a fresh salad for a satisfying and healthy meal.

Serves 2

  • 4 mackerel fillets
  • 3 tablespoons soy sauce
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey
  • 1 tablespoon grated ginger
  • 2 cloves garlic, minced
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 2 green onions, thinly sliced
  • Sesame seeds, for garnish

In a bowl, combine soy sauce, lime juice, honey, grated ginger, minced garlic, sesame oil, and vegetable oil.

Place the mackerel fillets in a shallow dish and pour the marinade over them, making sure they are well coated. Let marinate for 30 minutes.

Preheat the grill to medium-high heat. Lightly oil the grill grates to prevent sticking.
Remove the mackerel fillets from the marinade and place them on the grill, skin side down. Cook for 4-5 minutes per side, or until the fish is cooked through and lightly charred.

Transfer the grilled mackerel to a serving platter and sprinkle with sliced green onions and sesame seeds. Serve hot and enjoy!
